Shabu Shabu is one of beef hot pot cooking. Very thinly sliced beef and
vegetables are cooked in a earthen saucepot called DONABE. It is usually
served with PONZU dipping sauce.
* How to cook and eat Shabu Shabu?
Diner takes a slice of beef with HASHI, and swings in the boiling KOBU-DASHI
soup. KOBU-DASHI soup is made from dried kelp and water. 2-3 swings. Cook
it for a few seconds. It's just time to eat. Dip it in PONZU sauce. Other
ingredients simmer as you like.
* Very thinly sliced beef ( usually sirloin or ribloin )
* Leek
* Torifoil, Crown daisy, Chinese cabbage, Carrot
* Shiitake-mushroom and Enokitake-mushroom
* Tofu ( usually soft type ), Starch-noodle
Shabu-shabu sauce uses PONZU with condiments. PONZU is a citrus-based sauce
( Mixed DASHI soup 1/3 and citrus-vinegar 1/3 and soy sauce 1/3 ).
* Condiments. Grated Japanese radish with red pepper and Chopped scallion
( blue onion ).
